At Mikuna, a Peruvian restaurant located in Chamberí, Madrid, we are seeking an experienced chef to join our team on a full-time basis. We are looking for a responsible, punctual, organized individual with a positive attitude, capable of working well in a team and maintaining a steady pace during service. Prior experience in cooking and knowledge of Peruvian cuisine are essential, as we prepare traditional dishes and original preparations rooted in Peruvian gastronomy. This is a full-time position with split shifts, including lunch, dinner, and weekend services. Approximate schedule Tuesday: from 19:00 until closing. Wednesday, Thursday, Friday, and Saturday: from 12:00 to 17:00 and from 20:00 until closing. Sunday: from 12:00 to 18:00\. Main responsibilities Preparation and cooking of menu items. Support in daily production and mise en place. Knowledge and handling of Peruvian culinary preparations. Organization and cleaning of the work area. Basic inventory control of products, raw materials, and storage conditions. Support during high-volume service periods. Compliance with hygiene, order, and food safety regulations. Collaboration with the rest of the kitchen team to maintain an efficient workflow. Requirements Previous experience as a chef. Knowledge of Peruvian cuisine. Responsibility, punctuality, and positive attitude. Ability to work under pressure during service. A clean, organized, and fast-working individual. Availability for full-time work with split shifts, including lunch, dinner, and weekends. Preferred qualifications Experience in Peruvian restaurants. Knowledge of ceviches, rice dishes, causas, saltados, ajíes, stocks, and traditional Peruvian preparations. Experience in high-volume restaurants.
