




Job Summary: We are seeking a professional to create and maintain recipe cards, coordinate inventories, and analyze F&B costs, contributing to the excellence of the Marbella Club. Today, as part of The Leading Hotels of the World, we uphold its legacy and foster a culture rooted in authenticity, excellence, and attention to detail—creating memorable experiences for our guests. The position outlined below is a vital part of our team and contributes to maintaining and elevating the quality standards that have defined Marbella Club for over 70 years. **Key Responsibilities:** * Create, update, and maintain recipe cards (bill of materials) for all group F\&B outlets: restaurants, bars, room service, banquets, and events. * Coordinate and supervise periodic inventories for kitchen, bar, cellar, and storeroom. Reconcile discrepancies between physical and theoretical stock, and investigate variances. * Analyze shrinkage, waste, internal transfers, and consumption (staff meals, complimentary items, breakage) by department and outlet. * Calculate and report actual vs. theoretical food cost and beverage cost, identify root causes of variances, and propose corrective actions. * Reconcile data across MICROS / POS, Microsoft Business Central, and warehouse management systems. * Support chefs and F\&B Managers with menu profitability analysis and menu engineering (star / cash cow / dog / question mark matrix). * Validate purchase prices against supplier contracts and negotiated rates; flag deviations. * Participate in the monthly F\&B closing process and preparation of reports for Management. * Collaborate with the Procurement Department on supplier qualification, performance monitoring, and benchmarking. **Candidate Requirements:** * Ability to work with multiple data sources: proven ability to extract, cross-reference, and consolidate information from heterogeneous systems (POS, ERP, inventory records, spreadsheets, technical specifications, supplier rate sheets, etc.) to build a single, reliable view reflecting the operational reality of the business. This is the core of the role: without the ability to "translate" what disparate systems report into one unified dashboard, true cost control cannot be achieved. * Experience: Internships, traineeships, or prior experience in hotels, foodservice, auditing, or finance departments is valued. * Advanced Excel skills: pivot tables, VLOOKUP / INDEX+MATCH, conditional formatting, handling large datasets. * Basic knowledge of analytical accounting and cost accounting. * Languages: native or equivalent Spanish; English minimum level B2\. Additional languages are a plus. * Willingness to travel occasionally between properties (Marbella, Ibiza, Sierra Nevada). * Minimum one year’s tenure as an employee at Marbella Club. **Preferred Qualifications:** * Prior experience with Microsoft Business Central, Opera PMS, MICROS Symphony / Simphony, or other hospitality ERP/POS systems. * Familiarity with Power BI or other data visualization and analytics tools drawing from heterogeneous sources (Business Central, POS, inventories, Excel). * Experience with F\&B stock management systems (e.g., Adaco, FNB Manager, etc.). * Prior experience in 4-5 star hotels or premium foodservice establishments. **Key Competencies:** * Analytical rigor and attention to detail. * Ability to communicate effectively with diverse stakeholders: kitchen, front-of-house, procurement, finance management. * Results orientation and commitment to continuous improvement. * Discretion and responsible handling of sensitive information. * Autonomy and organizational capability to manage multiple properties simultaneously.
