




Position Summary: We are seeking an experienced instructor to deliver a practical course on butchery, deli, fishmongery, and fresh product management, aimed at individuals at risk of social exclusion to enhance their employability. Training in fresh product and food section management We seek an instructor to deliver training targeted at a group of individuals at risk of social exclusion. The course objective is to professionally train participants so they can successfully perform the duties inherent to the position and increase their employability. The course approach must be entirely practical, and learning must follow this structure: CONTENTS MODULE 1: BUTCHERY SECTION * Organization and operation of the section * Types of meat: * By category: red, white, and black * By family or species: bovine, porcine, ovine, and caprine * Meat quality standards: * Variables determining meat quality * Transport, receipt, and storage of meat products * Butchering * Sales designations * Cuts with official designations MODULE 2: DELI SECTION * Organization and operation of the section * Analysis of deli products: * Components * Sausages and cured meats * Cheeses * Manual and machine cutting MODULE 3: FISHMONGERY SECTION * Organization and operation of the section * Types of fish and other section-specific products: * White, blue, leathery, cephalopod, and crustacean fish * Common fish misidentifications: nomenclature and closely related species * Freshness and quality of the product * Fish preparation and cleaning: * Scaling, bleeding, evisceration, washing, removal of bones and skin. * Butchering and portioning MODULE 4: FRESH PRODUCT MANAGEMENT * Control and supervision of fresh products * Fresh section checklist * Control and reduction of shrinkage in the fresh section * Problems and difficulties in the fresh section * Main causes of product spoilage * Guidelines for product storage * Labeling and packaging Position Type: Full-time, Part-time Education: * Compulsory Secondary Education (Desirable) Experience: * In the course area: 1 year (Desirable) Work Location: On-site employment
