




**Description:** ---------------- Job Mission Support the Quality Manager in controlling and improving the food safety and quality management system at an avocado processing plant producing guacamole, ensuring compliance with current legislation, regulatory standards (IFS Food), and customer requirements. Ensure that each batch is processed under optimal hygienic-sanitary conditions, maintaining food safety. Main Responsibilities 1. Conduct operational controls in the processing plant and HPP facility. 2. Supervise quality and food safety conditions before, during, and after final product manufacturing. 3. Monitor compliance with HACCP, particularly at critical process points: pulp removal, mixing, acidification, packaging, modified atmosphere packaging, metal detection, HPP handling, and rapid cooling (if applicable). 4. Prepare and update system documentation: records, procedures, technical instructions, technical data sheets, labeling, etc. 5. Perform sampling of guacamole, avocado pulp, and/or derived products (e.g., gazpacho). 6. Supervise proper implementation of cleaning and disinfection programs, pest control, allergen management, and traceability. 7. Support internal and external audits (IFS Food, organic, customer, and health authority audits). 8. Initial management of non-conforming products, process deviations, incidents, and complaints. 9. Operational coordination with production, maintenance, and palletizing teams to ensure product quality at every stage. **Requirements:** --------------- Academic Qualifications: * Bachelor’s Degree in Food Science and Technology * Bachelor’s Degree in Biology * Bachelor’s Degree in Chemistry * Bachelor’s Degree in Agricultural Engineering or equivalent. Experience (Preferred): * Experience in the horticultural or avocado processing industry. * Knowledge of pulp removal, mixing, and acidification operations. * Familiarity with IFS Food requirements. * Experience in sampling, analysis, and process monitoring. * Knowledge of enzymatic browning, fermentation, pH control, and microbiological stability.
