Knowledge of safety equipment and methodologies in skinning. We are seeking candidates for the skinner position at a meat industry company in Gordo (Cáceres). Candidates must have experience and dexterity in handling skinning knives, including those with curved and wide blades designed to separate skin without damaging the meat. It is important to understand the use of specialized knives with skinning hooks to expedite opening the skin along the back. Maintaining these tools—ensuring they remain extremely sharp—is essential for efficient and safe work. Additionally, knowledge of safety equipment such as gloves, knife sharpeners, and, if possible, hanging gear will be valued. Candidates are expected to master incision techniques to make clean cuts around the limbs, base of the tail, and a central line, as well as separation techniques using tension and cutting—alternating skin pulling with knife movement. Various skinning methodologies—both on the floor and in suspension—will also be considered.
