According to a Chinese legend, tea was discovered by pure chance by Emperor Shen-Nung around 3,000 years BC. The emperor, accompanied by his entourage, was resting in the shade of a tree. They had lit a fire, and a pot of hot water was boiling, causing steam to rise toward the tree. The heat dried some leaves, and the wind caused several leaves to fall into the pot of water. The water turned a golden color and acquired a delicious fragrance. The emperor tasted the beverage and loved it, noticing its pleasant and stimulating effect; he spontaneously exclaimed: “T’sa”, meaning “the divine”. To this day, tea is called “cha” in Chinese. In this tasting course, we will explore a little further this fascinating world of aromas, flavors, and textures. The course consists of the following sections: * History of tea * Types of tea * Tasting notes and descriptors * Properties and storage of tea * Harvesting and types * Caffeine * Single-origin teas and blends * Different formats * Tea tasting * Preparation of 6 teas: white, oolong, black, pu-ehr, green, yellow, and blends * How to prepare the perfect cup of tea and suitable vessels * How to distinguish high-quality infusions from poor ones * Blind tasting game, inspired by the ancient “Tocha” game The session will be accompanied by pastries and other food pairings.
