




We are looking for a candidate to fill the position of **Sommelier - Second Head Waiter** in a unique and exceptional project due to its ambition, trajectory, and expertise. This 1-Michelin-star and 2-Repsol-sun restaurant is located in southern Madrid. **What will be the main responsibilities of the role?** Lead and supervise, together with the head waiter, the service team, ensuring professional, agile, and elegant service. Advanced knowledge of wines and sommelier expertise. Coordinate communication between the dining room and kitchen. Ensure proper sequence of food courses and customer satisfaction throughout the entire experience. Train, motivate, and evaluate staff, promoting their professional development. Ensure compliance with the restaurant’s quality standards, protocols, and hospitality practices. Manage reservations, shift organization, materials, and cost control. Contribute suggestions for improving the overall customer experience. Propose improvements to the restaurant's wine cellar, including greater representation of wines from the Community of Madrid. **Requirements for this position:** **Education and Knowledge** Degree or training in hospitality, restaurant management, or dining room direction. Professional sommelier certification (minimum WSET Level 3). In-depth knowledge of protocol and service in high gastronomy (service pacing, sequences, plating in the dining room, etc.). Knowledge of oenology and food-wine pairings. Experience in managing reservations, shift planning, and cost control. Ability to effectively coordinate dining room and kitchen operations, ensuring smooth and harmonious service. **Languages** Native or native-level Spanish. Knowledge of English, French, or other additional languages will be valued. **Professional Experience** Minimum 3–4 years of experience in gastronomic restaurants, preferably with Michelin stars. Proven experience leading dining room teams and coordinating complex services. Advanced experience as a Sommelier in fine dining establishments. Work history in environments where hospitality, attention to detail, and empathy are as important as technical skills. **Personal Competencies** Natural leadership: ability to inspire, motivate, and unite the team. Residence nearby or willingness to commute to Valdemoro (Madrid). **What are the conditions offered for this project?** Indefinite contract, with a 90-day probation period. Professional category – Sommelier / Second Head Waiter. Weekly rest: 2 consecutive days (Sunday and Monday) + Tuesday and Wednesday dinners off. Vacation: 34 calendar days per year.
