Akelarre Restaurant, a 3-Michelin-star establishment since 1975, embodies culinary excellence under the vision of Chef Pedro Subijana—a dedicated team committed to innovation and meticulous attention to detail.
In 2017, Akelarre expanded further by opening a 5-star hotel with 22 rooms within the same building, featuring another restaurant—Espazio Oteiza—offering more traditional cuisine, a bar, and terraces with spectacular views of the Cantabrian Sea. A place where cuisine, landscape, and hospitality intertwine.
We are seeking a Maître/Director of the Dining Room responsible for leading, coordinating, and elevating the guest’s dining experience to the highest level of excellence—ensuring impeccable service through leadership of the front-of-house team, attention to detail, and creation of memorable experiences.
The primary objective of this position is to maintain and reinforce the restaurant’s three Michelin stars by delivering flawless front-of-house service that guarantees consistent excellence in every service, exceeds guest expectations, and fosters loyalty through personalized, elegant treatment. Additionally, the Maître/Director of the Dining Room must cultivate a highly professional, cohesive, and committed team, while ensuring effective coordination between front-of-house and kitchen to guarantee fluidity, precision, and coherence across the entire guest experience—and with management.
Key responsibilities:
* Lead, train, and motivate the front-of-house team, establishing clear workflows.
* Evaluate team performance and foster a culture of excellence, respect, and continuous improvement.
* Ensure personalized, elegant, and seamless service—from guest arrival to departure.
* Anticipate guest needs and manage expectations with discretion and sensitivity.
* Resolve incidents or complaints promptly, professionally, and empathetically.
* Possess deep knowledge of the restaurant’s philosophy.
* Act as the strategic liaison between front-of-house and kitchen, ensuring smooth communication regarding timing, allergens, preferences, and last-minute changes.
* Maintain standards of protocol, etiquette, and body language.
* Ensure absolute consistency in the team’s narrative regarding dishes, techniques, and culinary philosophy.
* Guarantee adherence to service timing.
* Supervise reservations, table assignments, and optimal dining room rotation.
* Ensure the dining room is in perfect condition (lighting, acoustics, cleanliness, temperature).
* Oversee high-level wine and beverage service in collaboration with sommeliers.
* Conduct ongoing audits of service quality.
* Analyze guest and critic feedback to drive continuous improvement.
**Additionally, we are also seeking FRONT-OF-HOUSE WAITERS/WAITRESSES** passionate about service, guest relations, and professional conduct.

* Ensure common areas are always ready and immaculate.

**What do we expect from you?**
* Prior experience in high-end restaurants or demanding gastronomic environments.
* Fluency in Spanish and advanced English (knowledge of other languages is an asset).
* Passion for guest service, with excellent presence and vocation for hospitality.
* Team-oriented mindset, commitment to continuous learning, and dedication to service excellence.
* Proficiency in Spanish and English is mandatory; knowledge of additional languages is valued positively.
* Previous experience in top-tier gastronomic restaurants.
* Strong attention to detail, leadership abilities, and outstanding communication skills.
