




Job Summary: We are seeking experienced and skilled skinners proficient in using knives to separate skin from meat without damaging the meat, mastering incision and skin-separation techniques. Knowledge of safety equipment and tool maintenance We are looking for skinners to join a meat-processing company located in Gordo (Cáceres). Applicants must have experience and dexterity in handling skinning knives, including curved and wide-bladed knives specifically designed to separate skin from meat without causing damage. Familiarity with skinning hooks—used to expedite opening the skin along the back—is essential. Maintaining these tools in optimal sharpness is critical for efficient and safe operation. Additionally, knowledge of safety equipment—including gloves, knife sharpeners, and, if possible, hanging equipment—is highly valued. Candidates are expected to master incision techniques for making clean cuts around limbs, the base of the tail, and a central line, as well as skin-separation techniques involving tension and cutting—alternating skin pulling with knife movement. Various skinning methodologies—both floor-based and suspended—will also be considered.
