




Position Summary: The Rooftop Captain supervises and coordinates rooftop operations, ensuring Nobu standards, team leadership, and an exceptional guest experience imbued with the KOKORO spirit. Team training on Nobu standards and KOKORO hospitality The Rooftop Captain supervises and coordinates rooftop operations (pool and lounge), ensuring Nobu standards, service control, team leadership, and an exceptional guest experience infused with the KOKORO spirit. Responsibilities include service execution, inter-departmental communication, and adherence to Rooftop SOPs. **Responsibilities:** * Supervise full-service delivery at the pool and lounge, ensuring compliance with Rooftop SOPs. * Greet guests and deliver personalized service by using their names. * Coordinate waitstaff, bartenders, and hostesses according to occupancy levels, zones, and daily operations. * Verify complete setup: fully stocked bar, ready server stations, clean and aligned furniture, appropriate temperature and music. * Monitor service timing: welcome within <3 minutes, drinks within 6–10 minutes, food within 5–10 minutes per SOP. * Ensure proper management of sun loungers/cabanas and guest assistance at the pool. * Supervise order taking, allergen handling, alternatives, and communication with kitchen/bar. * Ensure beverage and food presentation standards per Nobu guidelines. * Maintain order, cleanliness, and timely removal of tableware and garnishes. * Manage incidents and complaints, offering alternatives without outright refusal. * Review bills before delivery; ensure accurate billing procedures and room charge authorization. * Conduct shift handover: leave no open bills, report incidents, transfer tables, and confirm station restocking. * Train staff on SOPs, Nobu service standards, timing protocols, use of guest names, KOKORO principles, and hospitality excellence. * Maintain professional communication, visible leadership, and embody the Nobu attitude as a role model. * Support other hotel outlets as needed, performing duties appropriate to the assigned outlet (IRD, Banquets, Breakfast, Kozara, Restaurant).
